Raw Chocolate Macaroons

I find it so interesting when playing around with whole foods creating these wonderful and rich desserts.  You don't need all the heavy items that normal desserts call for like butter, eggs, sugar and cream and no oven needed is the best part.

These macaroons will make great little holiday treats or gifts for someone.  Put some in a holiday tin and let them discover the world of raw desserts.

I used raw coconut butter but, if you don't have access to getting this just use virgin coconut oil.  Don't leave it out or your macaroons won't set right.  Also, if you can't get your hands on carob powder use 100% cocoa powder.


1 1/2 cups unsweetened coconut flakes, plus extra for sprinkling
3/4 cup carob powder (or use cocoa powder)
1/2 cup maple syrup
1 Tbsp. coconut butter (or coconut oil)
1/4 Tsp. vanilla extract
1/4 tsp. sea salt

In a bowl combine all the ingredients and mix well.  Roll into balls and sprinkle with coconut.  Place on plate and cover and refrigerate for 30 minutes to an hour so the macaroons can firm up.  If your not much on the whole chocolate thing you can make Blondie macaroons by replacing the carob powder for almond flour.

So easy to put together and yet sooooo decadent.
